Role Overview
We are seeking a Kitchen Manager who will bring structure, accountability, and positive leadership to our culinary program. You will collaborate closely with taproom leadership and regional operations to shape the experience at one of Fieldwork’s most exciting locations.
Key Responsibilities
- Daily Operations: Oversee kitchen operations, ensuring consistency, cleanliness, and adherence to Fieldwork standards.
- Team Development: Hire, train, coach, and develop line cooks and dishwashers with clear expectations and active leadership.
- Food Preparation: Execute food preparation and service with an emphasis on quality, timing, and presentation.
- Inventory Management: Manage inventory, vendor relationships, and food cost controls.
- Compliance: Maintain compliance with health, safety, and sanitation standards, including required logs and procedures.
- Collaboration: Work with the General Manager and Regional Kitchen Manager on labor forecasting, scheduling, and financial targets.
- Recipe Adherence: Ensure recipe adherence, portion control, and consistent menu execution.
- Performance Management: Conduct performance check-ins, evaluations, and provide corrective coaching when necessary.
- Equipment Oversight: Troubleshoot equipment issues and coordinate repairs or maintenance with vendors.
- Event Support: Assist with special events, high-volume game days, and company initiatives.
Qualifications
- Experience: 3+ years of kitchen leadership or management experience (brewery, pizzeria, or high-volume restaurant preferred).
- Equipment Proficiency: Experience with kitchen equipment, specifically:
- Combi Oven
- Flat Top/Plancha
- Fryer
- Leadership Skills: Proven ability to lead, motivate, and retain kitchen teams.
- Operational Knowledge: Strong understanding of food cost, labor management, and inventory control.
- Hands-On Approach: Comfortable working the line and leading by example.
- Detail-Oriented: Organized and operationally focused.
- Food Safety Knowledge: Working knowledge of food safety, sanitation, and California health code requirements.
- Certification: California Food Manager Certification (or ability to obtain upon hire).
- Authorization: Must be authorized to work in the United States.
- Language Skills: Spanish language skills are a plus, but not required.
